Healthier Pumpkin Butter October 12, 2011

A sweet tooth and a hankering for pumpkin are what led me to whip up this yummy concoction last night. I tried to keep it as healthy, low calorie, and low fat as possible so if you want that richer, sweeter pumpkin butter just add evaporated milk/heavy cream and more honey.



16oz canned pumpkin (NOT pumpkin pie mix)

2 heaping tablespoons Smart Balance spread

2 tablespoons mild honey

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground cloves

1 teaspoon nutmeg

1/2 teaspoon ground ginger

2 teaspoons pumpkin pie spice

1 teaspoon apple pie spice

1/4 cup brown sugar



1. Combine all ingredients well.

2. Bring to a boil.

3. Reduce heat and let simmer for 30 minutes.

Enjoy warm on toast, biscuits, or use it as a dip with graham crackers!
