Not the best photo representation of this phenomenal dessert, but it will have to do!
These are Scotcheroos. They are my go-to dessert for any function because they are easy and always a favorite with everyone! Imagine rice krispies treats… go ahead, imagine one in your mouth… now imagine peanut butter, chocolate, and butterscotch in the mix to make it 100x better. Yeah. That good. Try them and you will know what I mean!
It was almost two years ago that I found this recipe and wrote it down, but I do not remember which website I found it on. I do know it is on Kellogg’s website, though. They have a modification using cocoa Rice Krispies cereal instead of plain, but I haven’t tried that yet.
1 c. sugar
1c. light corn syrup
2 tbsp. butter
1 c. peanut butter
6 c. rice krispies cereal
1 – 12 oz package semi-sweet chocolate chips
1 – 12 oz package butterscotch chips
In a large pot cook sugar, corn syrup, and butter over med heat. Stir until completely dissolved and mixture comes to a low boil.
Remove from heat and add peanut butter. Stir until melted together. Add cereal and stir until coated.
Spread mixture evenly into a greased 9 x 13 pan and pat down using slightly wet hands.
Melt chocolate and butterscotch chips together in the microwave approx. 2 minutes, stopping to stir every 30 seconds. Pour over the top of cereal treats and allow to cool for a minimum of 1 hour.
Cut into squares and serve. Cutting is easier said than done, so if you want to make it easier on yourself by packing the krispies into a mini muffin pan before spreading the coating, that would work, too!
